The aromas
The 60 aromas come in three separate boxes and are grouped in nine aromatic families:
- Floral or Fruity: honey, black tea, rose, jasmine, raspberry, blueberry, blackcurrant, strawberry, raisin, prune, cherry, pineapple, mango, melon, banana, apple, peach, orange, lemon, lime
- Sour/Fermented, Green/Vegetative or Other: butyric acid, winey, coffee pulp, pea pod, fresh grass, cucumber, green (bell) pepper, hay-like, thyme, pine, cedar, potato, cardboard, woody, mouldy/damp, musty/earthy, leather, medicinal, tar
- Roasted, Spices, Nutty/Cocoa or Sweet: rubber, tobacco, smoky, butter, toast, malt, pepper, star anise, nutmeg, cinnamon, clove, peanut, hazelnut, almond, walnut, dark chocolate, chocolate, brown sugar, maple syrup, caramelised, vanilla
The book
Le Nez du Café was completely updated in 2025 in partnership with Coffee Quality Institute (CQI).
The selection of aromas has been greatly expanded in the new edition, from 36 to 60, with the vials divided into three separate, easy-to-transport boxes. The kit enriches the sensory experience of coffee for professionals and amateur coffee lovers alike, alone or in groups, and offers a common vocabulary for describing the aromatic qualities of speciality coffees.
Another new feature of this updated edition is that each aroma is accompanied by a large-format fact sheet describing its different olfactory aspects, its chemical composition and its presence in the world’s coffees.
The book has been thoroughly revised to take into account the latest research on the coffee genome, post-harvest treatments and coffee roasting.
Additionally, an instruction leaflet includes exercises and games to do alone or with others to hone your skills in identifying coffee aromas.
